Mediterranean Protein Power Salad ๐Ÿฅ—๐ŸŸ๐Ÿฅš


Ingredients:

2 cups arugula or mixed greens ๐ŸŒฟ

½ cup cooked chickpeas ๐Ÿง†

½ cup cooked pasta (fusilli or rotini) ๐Ÿ

¼ cup tuna chunks ๐ŸŸ

1 boiled egg, quartered ๐Ÿฅš

¼ cup shredded carrots ๐Ÿฅ•

¼ cup mixed olives (green & black) ๐Ÿซ’

¼ cup diced mozzarella or feta cheese ๐Ÿง€

1 tbsp olive oil & 1 tsp lemon juice ๐Ÿ‹

Salt, pepper & chopped parsley to taste ๐ŸŒฟ

Instructions:

1. Layer greens in a bowl.

2. Arrange chickpeas, pasta, tuna, egg, carrots, olives, and cheese neatly on top.

3. Drizzle olive oil and lemon juice.

4. Season with salt, pepper, and parsley.
