Ingredients:
2 cups arugula or mixed greens ๐ฟ
½ cup cooked chickpeas ๐ง
½ cup cooked pasta (fusilli or rotini) ๐
¼ cup tuna chunks ๐
1 boiled egg, quartered ๐ฅ
¼ cup shredded carrots ๐ฅ
¼ cup mixed olives (green & black) ๐ซ
¼ cup diced mozzarella or feta cheese ๐ง
1 tbsp olive oil & 1 tsp lemon juice ๐
Salt, pepper & chopped parsley to taste ๐ฟ
Instructions:
1. Layer greens in a bowl.
2. Arrange chickpeas, pasta, tuna, egg, carrots, olives, and cheese neatly on top.
3. Drizzle olive oil and lemon juice.
4. Season with salt, pepper, and parsley.
