One-Skill Cowboy Butter Steak Bites
Ingredients:
1 pound sirloin steak, cut into bite-sized cubes
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and black pepper to taste
18-ounce cheese tortellini
3 cloves garlic, minced
1 teaspoon Dijon mustard
1 tablespoon lemon juice
1 teaspoon fresh parsley, chopped
1/2 teaspoon crushed red pepper flakes
1/4 cup grated Parmesan cheese
2 tablespoons fresh chives, chopped
Directions:
Cook the cheese tortellini according to package directions. Drain and set aside.
Heat the olive oil in a large skillet over medium-high heat. Season the steak bites with garlic powder, smoked paprika, salt, and black pepper.
Add the steak bites to the skillet and cook for 2 to 3 minutes per side until golden brown. Remove and set aside.
In the same skillet, melt the butter and sauté the minced garlic for 30 seconds until fragrant.
Stir in Dijon mustard, lemon juice, parsley, and crushed red pepper flakes.
Add the cooked tortellini to the skillet and toss to coat with the cowboy butter sauce.
Return the steak bites to the skillet and gently toss to coat.
Sprinkle with Parmesan cheese and fresh chives before serving.
