Avocado Toast with Feta
Ingredients:
2 ripe avocados
4 slices of whole grain or sourdough bread
1/2 cup crumbled feta cheese
1 tbsp olive oil
Juice of 1/2 lemon
1/2 tsp red pepper flakes (optional)
Salt and black pepper to taste
Fresh herbs (parsley, dill, or chives) for garnish
Optional: cherry tomatoes, sliced radish, or poached eggs
Directions:
Toast the slices of bread until golden and crisp.
Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
Add lemon juice, olive oil, salt, and black pepper to the avocado and mash until desired consistency (chunky or smooth).
Spread the mashed avocado generously over each piece of toast.
Sprinkle crumbled feta cheese evenly on top.
Add red pepper flakes for a spicy kick, if desired.
Garnish with fresh herbs and any additional toppings like cherry tomatoes, radish slices, or a poached egg.
Serve immediately and enjoy!
