Savory Almond & Herb Grain-Free Loaf

The Ingredient List
2 ½ cups: Super-fine Almond Flour
4: Large Eggs
½ cup: Greek Yogurt or Sour Cream (adds moisture and tang)
¼ cup: Olive Oil (or melted butter)
½ cup: Sliced or Whole Almonds (for the batter and topping)
¼ cup: Fresh Chives or Scallions (finely chopped)
Leavening: 1 tsp Baking Powder and ½ tsp Salt
Herbs: 1 tsp Dried Rosemary and 1 tsp Dried Thyme (or Italian seasoning)
The "Secret" Crunch: 1 tbsp Flax seeds or Sesame seeds (shown in the small bowl)
Instructions
1. Preparation
Preheat your oven to 350°F (175°C). Line a standard loaf pan with parchment paper, leaving a little overhang on the sides so you can easily lift the bread out later.
2. Mix the Wet and Dry
In a large bowl, whisk the eggs, olive oil, and Greek yogurt until smooth. In a separate bowl, combine the almond flour, baking powder, salt, and dried herbs. Gradually fold the dry ingredients into the wet until a thick batter forms.
3. Fold in the Texture
Gently stir in the chopped chives and most of the almonds (save a handful of sliced ones for the top). The batter will be much thicker than traditional wheat bread dough—this is normal!
4. Smooth and Decorate
Transfer the batter to the loaf pan and smooth the top with a spatula. Sprinkle the remaining sliced almonds and a few extra herbs over the top for that professional bakery look.
5. Bake
Bake for 45–50 minutes. You’ll know it’s done when the top is a deep golden brown and a toothpick inserted into the center comes out clean.
