・1 cup sun-dried tomatoes in oil, drained
・½ cup fresh basil leaves
・3 garlic cloves
・⅓ cup grated parmesan cheese
・¼ cup olive oil
・2 tbsp balsamic vinegar
・1 tsp red chili flakes
・½ tsp flaky sea salt
・¼ tsp cracked black pepper

🌿 The Basil Oil Drizzle

・1 cup fresh basil leaves
・⅓ cup extra virgin olive oil
・1 garlic clove
・¼ tsp fine sea salt

✨ The Finishing Crown

・⅓ cup pistachios, finely crushed
・Fresh torn basil leaves
・Tiny edible yellow flower petals
・1 tbsp warm honey for drizzling
・Cracked black pepper
・Flaky sea salt

🔥 Preheat the oven to 400°F and line a large round baking tray with parchment paper.
⠀
🍅 Blend sun-dried tomatoes with basil, garlic, parmesan, olive oil, balsamic, chili flakes, salt, and pepper into a glossy pesto.

🥐 Place the brie wheel in the center of the parchment as the sunflower anchor.

✨ Stack the two puff pastry sheets and cut a large circle that wraps fully around the brie.

🎨 Spread the sun-dried tomato pesto evenly across the pastry circle around the brie center.

🍃 Scatter half the crushed pistachios over the pesto, then cover with the second pastry circle.

🌻 Cut the pastry outward from the brie in 16 equal strips, then twist each strip twice to form petals.

🔥 Brush the petals with beaten egg and melted butter, sprinkle with salt, then bake for 25 minutes.

🌿 Blend basil with olive oil, garlic, and salt until vivid emerald, then strain through a fine sieve.

🌟 Slice the top of the warm brie open, drizzle honey and basil oil, scatter pistachios, and crown with basil, flower petals, pepper, and salt.
