BEST TARTLET FILLINGS
Ingredients:
LEMON CREAM
Lemon juice: 1/2 cup
Lemon zest: 1 tsp.
Sugar: 1/2 cup
Egg yolks: 4
Butter: 1/3 cup
Cornstarch: 1 tbsp.
ALMOND CREAM
Almond flour: 1 cup
Butter: 1/2 cup
Sugar: 1/2 cup
Eggs: 2
Vanilla: 1 tsp.
Flour: 2 tbsp.
CHOCOLATE GANACHE
Dark chocolate: 1 cup
Warm cream: 3/4 cup
Butter: 2 tbsp.
Powdered sugar: 1 tbsp.
Cocoa powder: 1 tbsp.
Chopped hazelnuts: 1/4 cup
RED BERRY CREAM
Red berry puree: 1 cup
Sugar: 1/3 cup
Egg yolks: 3
Cornstarch: 2 tbsp
Butter: 2 tbsp
Vanilla: 1 tsp
Preparation:
Prepare the tartlet shells and bake until golden brown and crisp.
For the lemon cream, heat the lemon juice with the zest and sugar, then add the egg yolks and cornstarch. Cook over low heat until thickened, then stir in the butter.
For the almond cream, cream the butter with the sugar, then add the eggs, almond flour, flour, and vanilla. Fill the tartlet shells and bake until lightly browned. For the chocolate ganache, pour the hot cream over the dark chocolate, let it melt, then add the butter, cocoa powder, and powdered sugar. Mix until smooth.
For the berry cream, heat the berry purée with the sugar, add the egg yolks and cornstarch, then cook until thickened. Stir in the butter and vanilla.
Let all the fillings cool before using.
Fill the tartlet shells with the chosen cream.
Decorate according to the filling and serve chilled.
