Cannelés from Bordeaux
Ingredients:
500 ml milk
2 eggs
2 egg yolks
100 g flour
200 g sugar
50 g butter
1 tsp vanilla extract
Instructions:
Heat the milk with the butter and vanilla extract.
In a bowl, mix the flour and sugar.
Add the eggs and egg yolks, then mix.
Gradually pour in the hot milk, stirring until you obtain a smooth batter.
Let the batter rest in the refrigerator for at least 1 hour.
Pour the batter into buttered cannelé molds.
Bake at 210°C (410°F) for 15 minutes, then reduce the temperature to 180°C (350°F) and bake for another 35 to 40 minutes.
Let cool slightly before unmolding.
