Comté Cheese Gougères
Ingredients:
250 ml water
80 g butter
150 g flour
4 eggs
120 g grated Comté cheese
Nutmeg
Salt, pepper
Preparation:
Preheat the oven to 180°C (350°F).
In a saucepan, bring the water, butter, and a pinch of salt to a boil.
Remove from the heat, add the flour all at once, and stir vigorously until a smooth dough forms.
Return to low heat for 1 to 2 minutes to dry the dough slightly.
Off the heat, incorporate the eggs one at a time, mixing well between each addition.
Add the grated Comté cheese, a pinch of nutmeg, and pepper.
Drop small mounds of dough onto a baking sheet lined with parchment paper.
Bake for 20 to 25 minutes, until the gougères are golden brown and puffed up. Serve warm as an appetizer.
