Provençal Shakshuka

Ingredients:

3 red bell peppers

2 zucchini

5 tomatoes

1 onion

2 cloves of garlic

4 eggs

2 tablespoons of olive oil

Salt

Pepper

Herbes de Provence

Preparation:

Wash the bell peppers, zucchini, and tomatoes.

Cut the bell peppers into strips, the zucchini into rounds, and the tomatoes into chunks.

Peel and mince the onion and garlic.

Heat the olive oil in a large skillet or Dutch oven.

Sauté the onion and garlic for a few minutes.

Add the bell peppers and zucchini, then cook for 8 to 10 minutes.

Add the tomatoes, salt, pepper, and Herbes de Provence.

Simmer until the vegetables are tender and the sauce has reduced.

Make 4 small wells in the sauce, then crack an egg into each well. Cover and cook until the egg whites are set and the yolks are still slightly runny.

Serve hot.
