Rustic Chickpea Stew with Vegetables
Ingredients:
300g cooked chickpeas
2 medium carrots, diced
2 medium potatoes, cubed
1 onion, chopped
2 garlic cloves, minced
2 tablespoons olive oil
1 liter vegetable stock
1 bay leaf
1 teaspoon thyme
Salt and pepper
Chopped fresh parsley, to serve
Instructions:
Heat the olive oil in a large saucepan over medium heat.
Add the onion and garlic, and sauté until softened.
Add the carrots and potatoes, and cook for 2-3 minutes.
Stir in the chickpeas, vegetable stock, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer for 25 to 30 minutes, until the vegetables are tender.
Season with salt and pepper to taste.
Serve hot, garnished with freshly chopped parsley.
