⏱️ Preparation: 20 min
❄️ Resting time: 6 h
🍽️ Servings: 4 glasses
🛒 Ingredients:
🧀 250 g mascarpone cheese
🥚 2 eggs
🍚 100 g sugar
🍓 250 g strawberries
🍪 250 g speculoos cookies
👩🍳 Preparation
1️⃣ Prepare the speculoos cookies
Reserve one speculoos cookie per glass for decoration.
Crumble the remaining speculoos and spread a first layer at the bottom of the verrines.
2️⃣ Prepare the strawberries
Wash and hull the strawberries, then cut them in half.
Arrange a few on the biscuits and along the sides of the verrines for a pretty presentation.
3️⃣ Prepare the mascarpone cream
In a bowl, mix the mascarpone with the egg yolks and sugar until smooth.
4️⃣ Whip the egg whites
Beat the egg whites until stiff peaks form, then gently fold them into the mascarpone mixture to maintain a light and airy texture.
5️⃣ Assemble the verrines
Add a layer of mascarpone cream on top of the strawberries.
Then alternate the layers: speculoos, strawberries, and cream until you reach the top of the verrines. 6️⃣ Resting
Finish with a layer of cream and then place in the refrigerator for at least 6 hours.
