🐟🍳 Fresh Spring Salmon Salad 🥗

Ingredients:

🥗 Salad:

2 cups baby spinach leaves

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/4 red onion, thinly sliced

1/2 cup Kalamata olives

1/2 cup feta cheese, crumbled

🐟 Salmon:

2 salmon fillets

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon lemon juice

🥚 Boiled Eggs:

2 large eggs

🍋 Dressing:

1/4 cup extra virgin olive oil

2 tablespoons fresh lemon juice

1 teaspoon Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Instructions:

Prepare the Salmon:

Preheat your oven to 375°F (190°C).

Place the salmon fillets on a baking sheet lined with parchment paper.

Drizzle with olive oil, lemon juice, and season with salt and pepper.

Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Set aside to cool slightly.

Boil the Eggs:

Place the eggs in a small pot and cover with water.

Bring to a boil, then reduce the heat and simmer for 9-12 minutes.

Remove the eggs from the hot water and place in an ice bath to cool.

Peel and cut in half.

Assemble the Salad:

In a large bowl, combine baby spinach, cherry tomatoes, cucumber, red onion, and Kalamata olives.

Top with crumbled feta cheese.

Make the Dressing:

In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, Dijon mustard, minced garlic, salt, and pepper.

Drizzle the dressing over the salad and toss gently to combine.

Serve:

Arrange the salad on plates and add the salmon fillets and boiled egg halves on the side.
