🛒 Ingredients
For the creamy filling
250g mascarpone cheese
2 fresh eggs
100g smoked salmon, thinly sliced
1 bunch of freshly chopped dill
1 organic lemon (zest and juice)
Salt and freshly ground pepper
For the breadstick crisp
8 plain breadsticks
1 tablespoon olive oil
Zest of 1 lemon
A few drops of lemon juice
A pinch of salt
Freshly ground pepper
For garnish
A few slices of smoked salmon
Sprigs of dill
Lemon zest
A few capers (optional)
👩🍳 Preparation
1️⃣ Prepare the crumble topping
Roughly crush the breadsticks with a rolling pin.
Place them in a bowl.
Add the olive oil, lemon zest, a few drops of lemon juice, salt, and pepper.
Mix until slightly moist.
2️⃣ Prepare the mascarpone cream
Separate the egg whites from the yolks.
Whisk the yolks with the mascarpone until smooth.
Add the lemon juice and zest.
Fold in the chopped dill.
Season lightly with salt and pepper.
3️⃣ Whip the egg whites
Whip the egg whites until stiff peaks form.
Gently fold them into the mascarpone mixture using a spatula.
Mix gently to maintain a light and airy texture. 4️⃣ Assembling the Tiramisu
Spread a layer of breadstick crumbs in the bottom of a dish or individual glasses.
Add a layer of mascarpone cream.
Arrange a few slices of smoked salmon on top.
Repeat the process, finishing with a layer of cream.
5️⃣ Resting and Finishing
Cover and refrigerate for at least 2 hours.
Just before serving, decorate with the remaining smoked salmon, a few sprigs of dill, lemon zest, and optionally, a few capers.
