🥔 Vosges Salad
Ingredients
1 head of lettuce
500g potatoes
200g smoked bacon lardons
150g Emmental cheese
2 tomatoes
1 red onion
Vinaigrette
3 tbsp oil
1 tbsp wine vinegar
1 tsp mustard
Salt and pepper
Preparation
Cook the potatoes in salted water for 20 minutes.
Let them cool slightly, then cut them into chunks.
Fry the bacon until golden brown.
Chop the tomatoes, red onion, and Emmental cheese.
Arrange the lettuce in a salad bowl.
Add all the ingredients.
Mix the vinaigrette ingredients.
Season and serve immediately.
🫒 Catalan Salad
Ingredients
1 head of lettuce
400g cooked white beans
2 cans of tuna in water
2 tomatoes
80g black olives
4 hard-boiled eggs
Vinaigrette
3 tbsp olive oil
1 tbsp red wine vinegar
1 minced garlic clove
Preparation
Hard-boil the eggs for 10 minutes.
Drain the white beans and tuna.
Cut the tomatoes into wedges.
Arrange the lettuce in a large salad bowl.
Add the beans, tuna, olives, and eggs.
Mix the vinaigrette ingredients.
Drizzle over the salad and serve chilled.
🧀 Warm Goat Cheese Salad
Ingredients
150g mixed greens
1 log of goat cheese
2 apples
2 tomatoes
60g walnuts
Vinaigrette
1 tbsp honey
3 tbsp olive oil
1 tbsp balsamic vinegar
Preparation
Arrange the mixed greens in a serving dish.
Slice the apples and tomatoes.
Butter the goat cheese rounds in the oven for 5 minutes.
Distribute the apples, tomatoes, and walnuts.
Add the warm goat cheese.
Mix the vinaigrette ingredients.
Drizzle over the salad and serve immediately. 🌭 Alsatian Salad
Ingredients
300g white cabbage
250g cervelas sausage
150g Emmental cheese
2 tomatoes
A few lettuce leaves
Dressing
3 tbsp crème fraîche
1 tbsp white vinegar
1 tbsp chopped chives
Salt and pepper
Preparation
Finely shred the cabbage.
Cut the cervelas, Emmental, and tomatoes.
Arrange the lettuce at the bottom of a salad bowl.
Add the remaining ingredients.
Mix the crème fraîche, vinegar, and chives.
Pour over the salad.
Gently toss before serving.

Ingredients
300g cooked green lentils
2 carrots
2 shallots
2 tbsp 1 tablespoon chopped parsley
150g smoked duck breast
Vinaigrette
3 tablespoons walnut oil
1 tablespoon sherry vinegar
1 teaspoon mustard
Preparation
Cook the lentils and let them cool.
Dice the carrots.
Finely chop the shallots.
Mix the lentils with the vegetables and parsley.
Add the sliced smoked duck breast.
Prepare the vinaigrette.
Season and serve chilled.
🌽 Spring Salad
Ingredients
1 lettuce
200g cooked ham
150g corn
2 grated carrots
1/2 cucumber
2 tomatoes
Lemon-Dill Dressing
3 tablespoons crème fraîche
Juice of 1 lemon
1 tablespoon 1 tablespoon chopped dill
Salt and pepper
Preparation
Wash and dry the lettuce.
Cut the ham into thin strips.
Cut the tomatoes and cucumber.
Grate the carrots.
Arrange all the ingredients in a salad bowl.
Mix the cream, lemon juice, and dill.
Pour the dressing over the salad just before serving.
