Sauce base
200g grated cheddar cheese
200ml double cream
100ml whole milk
1 tbsp butter
1 tbsp flour
1 tsp Dijon mustard (optional)
1 pinch sweet or smoked paprika
Salt
Freshly ground pepper
For an even more indulgent version (optional)
50g grated mozzarella cheese
20g grated Parmesan cheese
A few jalapeño slices
A pinch of cayenne pepper
👨🍳 Preparation
1️⃣ Prepare the roux
In a saucepan, melt the butter Low heat.
Add the flour and whisk immediately for 1 to 2 minutes, without letting it brown.
This step ensures a perfectly smooth sauce.
2️⃣ Stir in the milk
Gradually pour in the milk while whisking constantly to prevent lumps.
Cook for 3 to 4 minutes until the mixture begins to thicken.
3️⃣ Add the cream
Stir in the heavy cream.
Mix until you obtain a smooth and velvety texture.
4️⃣ Add the cheese
Reduce the heat slightly.
Add the grated cheddar in several batches, stirring continuously until it is completely melted.
If you want an even more stringy sauce, stir in the mozzarella.
Then add the Parmesan to enhance the flavor.
5️⃣ Season
Add:
mustard (optional)
paprika
a pinch of salt
freshly ground pepper
Taste and adjust the seasoning if necessary.
If the sauce is too thick, add a little warm milk.
