🍤🦪 Mediterranean Seafood Stew 🍅🌿
🛒 Ingredients
300g shrimp, peeled and deveined 🍤
250g mussels, cleaned 🦪
250g clams, cleaned 🐚
200g scallops
1 small onion, diced 🧅
3 garlic cloves, minced 🧄
1 red bell pepper, diced 🫑
2 tomatoes, diced 🍅
2 tbsp olive oil
1 cup seafood stock 🥣
1/2 cup white wine 🍷
1 tbsp tomato paste 🍅
1 tsp paprika 🌶️
1/2 tsp chili flakes 🌶️
1 tsp dried thyme 🌿
Salt and black pepper to taste 🧂
Lemon wedges for serving 🍋
Fresh parsley, chopped 🌱
👨🍳 Instructions
1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper. Cook for 3–4 minutes until softened. 🧅🧄🫑
2. Stir in the tomatoes, tomato paste, paprika, chili flakes, and thyme. Cook for 5 minutes, stirring occasionally. 🍅🌶️🌿
3. Pour in the seafood stock and white wine. Bring to a gentle simmer and cook for 10 minutes. 🥣🍷
4. Add the mussels and clams. Cover the pot and cook for 5 minutes until the shells begin to open. 🦪🐚
5. Add the shrimp and scallops. Simmer for another 4–5 minutes until the shrimp turn pink and the scallops are cooked through. 🍤
6. Season with salt and black pepper. Discard any mussels or clams that remain closed. 🧂
7. Sprinkle with fresh parsley and serve immediately with lemon wedges. 🍋🌱
