🐢🍫 No-Bake Turtle Mini Cheesecakes
These No-Bake Turtle Mini Cheesecakes are rich, creamy, and loaded with all the classic turtle candy flavors—smooth cheesecake, gooey caramel, crunchy pecans, and decadent chocolate. Perfect for parties, holidays, or whenever you need an easy, elegant dessert!
🛒 Ingredients
For the Crust
1½ cups chocolate cookie crumbs (or graham cracker crumbs)
¼ cup granulated sugar (if using graham crackers)
6 tablespoons unsalted butter, melted
For the Cheesecake Filling
16 ounces cream cheese, softened
¾ cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream, whipped to stiff peaks (or 2 cups whipped topping)
For the Turtle Topping
½ cup caramel sauce
½ cup chocolate ganache or chocolate syrup
¾ cup chopped toasted pecans
Whole pecan halves, for garnish (optional)
Chocolate curls or mini chocolate chips (optional)
👩🍳 Instructions
1️⃣ Prepare the Crust
Line a 12-cup muffin pan with paper liners.
In a bowl, combine the cookie crumbs and melted butter until evenly moistened.
Divide the mixture evenly among the muffin cups and press firmly into the bottom.
Refrigerate for 15 minutes.
2️⃣ Make the Cheesecake Filling
In a large bowl, beat the cream cheese until smooth.
Add the powdered sugar and vanilla extract, mixing until creamy.
Gently fold in the whipped cream (or whipped topping) until light and fluffy.
3️⃣ Fill the Cheesecakes
Spoon or pipe the filling evenly over the chilled crusts.
Smooth the tops with a spatula.
Refrigerate for at least 4 hours, or overnight for the best texture.
4️⃣ Decorate
Just before serving, drizzle each mini cheesecake with caramel sauce and chocolate ganache.
Sprinkle generously with chopped toasted pecans and garnish with a pecan half or chocolate curls, if desired.
5️⃣ Serve
Carefully remove the paper liners and serve chilled.
