Tuna Tacos with Bayou Glazes
Tuna Tacos
Seared tuna on lemon parsley slaw, garnished with tomato & green onion, topped with Bayou glazes.
Serves 4 (8 tacos)
Ingredients
Tuna
• 1½ lbs sushi-grade ahi tuna
• 1 tbsp olive oil
• 1 tsp Cajun seasoning
• ½ tsp black pepper
• ½ tsp garlic powder
Lemon Parsley Slaw
• 3 cups shredded cabbage
• ½ cup chopped parsley
• ¼ cup mayonnaise
• 1 tbsp lemon juice
• 1 tsp lemon zest
• Salt and pepper to taste
Bayou Glaze
• ¼ cup pepper jelly
• 2 tbsp hot sauce
• 1 tbsp honey
• 1 tsp Cajun seasoning
Asian Glaze
• ¼ cup soy sauce
• 2 tbsp sweet chili sauce
• 1 tbsp honey
• 1 tsp sesame oil
• 1 tsp grated ginger
• 1 clove garlic, minced
Garnish
• 1 tomato, diced
• 3 green onions, sliced
• 8 small flour or corn tortillas
Instructions
1. Make the Glazes
For the Bayou glaze:
1. Combine pepper jelly, hot sauce, honey, and Cajun seasoning in a small saucepan.
2. Simmer 2–3 minutes until smooth.
2. Prepare the Slaw
1. Mix cabbage, parsley, mayonnaise, lemon juice, and lemon zest.
2. Season with salt and pepper.
3. Chill until ready to serve.
3. Sear the Tuna
1. Pat tuna dry.
2. Rub with olive oil and seasonings.
3. Heat a cast-iron skillet until very hot.
4. Sear tuna about 45–60 seconds per side, leaving the center rare.
5. Rest 5 minutes and slice thinly.
4. Assemble
1. Warm tortillas.
2. Add a layer of lemon parsley slaw.
3. Top with sliced seared tuna.
4. Sprinkle with diced tomato and green onion.
5. Drizzle with both Bayou and Asian glazes.
Louisiana Touch
Add a few thin slices of pickled jalapeños and a dusting of Cajun seasoning just before serving for an extra Bayou kick. 🌮🐟🔥
